Quinoa Burrito

To say that I love rice is an understatement! But with trying to be the fittest that I've ever been comes sacrifice and willpower, which means a lot to this rice loving girl. I used to eat rice almost everyday, it's no wonder I'm huge!
  A lot's changed these past few months, for one I've stopped eating white rice and switched to brown rice, but that was just the perfect excuse to keep on eating rice, and when I noticed that nothing was happening despite working out and taking out white rice from my diet, I knew I had to make serious changes. 
One of them was to definitely stop eating rice everyday. First I started with eating brown rice once a week and then I decided to do some research and try to find some sort of replacement, that's when I found Quinoa pronounced Keen - wa.
 Let me tell you, I love it! It is delicious, can be used for anything and it tricks my mind into thinking it's rice :)
One of my favorite quick meals with Quinoa is making a burrito out of it, plus it's a winner for my son.

Quinoa Burrito:
Get all of your ingredients ready.
First put your whole wheat wrap on a plate and layer on your first ingredient, refried beans.
Second layer on some spinach.
Third you top it off with the quinoa and roasted chicken cubes.
Voila! You have a healthy yet very delicious wrap :)

You can add as many ingredients as you want and in less than 15mins you have your lunch or dinner and your set to eat.  I say 15mins because I usually cook my Quinoa in a batch and store it in the fridge (must be used within 2 weeks) and when I'm ready to use I just heat and serve! 
Even if you have to cook the Quinoa on the spot it cooks in just 20mins.

Happy Birthday Soul Mate!

On a day like today some years back my Soul mate was born!
Who knew he'd travel half across the world and marry some spoiled rotten girl - me :)
I am so grateful and blessed to have this wonderful man by my side, someone who completes me in every single way, spoils me rotten, gives me foot rubs every single night, loves me for who I am and is one of the greatest fathers ever (aside from my daddy being #1 - :D )
Humbe is my love, my everything and my lobster!

 True love is not about the hugs and kisses, the 'I love you's' or the 'I miss you's', but about the chills that hit every part of your spine when you think about him.

It's the simple things in life...

❤ Enjoying one of my new favorite snacks! It's sugar free and only 60 calories :) Not to mention that it is delicious!!

❤ My baby and his rock art! Painted at his school fair for the school garden. It's been so much fun walking by the school garden everyday and seeing his rock, rocking out in the sun :)

❤ Watching Miguelito play Soccer out in the sun and getting tanned, now I have two toned colored feet. It's not even Summer yet!

❤ Miguelito practicing for his big show (I haven't been blogging, but his show was this past Sunday May 20, 2012)

 Enjoying a late brunch at IHOP with my mom. I was sure to pick something healthy & and enjoyed one of their items from their new (to me) Simple & Fit menu. My total calorie intake at IHOP 400 calories! :) Not counting my cup of coffee!

 ❤ Working out everyday & feeling oh so powerful afterwards!  I hadn't weighed myself for two weeks, not only because I was scared but my scale's battery died and I kept forgetting to get new batteries. I finally did and when I weighed myself I saw that I'd lost 5 lbs! 5lbs in 2 weeks made me feel like the happiest girl ever! I am a girl on a mission!! {Update - I've lost one more pound, making it  a total of 6lbs! Pumping my fist in the air}

FitBlogNYC 2012

It's officially been three days since I attended Fitness Magazine's Meet & Tweet Blogger event at the Metropolitan Pavilion and let me tell you I am still on cloud 9!
This was my first blogger themed conference that I  attended, and it couldn't have been any better! A room full of strong confident woman who believe in fitness and a healthy lifestyle?! 
It still feels so surreal that I was a part of this incredible event especially during this moment in my life when I am on a mission to be the fittest that I've ever been :) 
Hopefully one day I can be a part of #TheFitFluentialTeam

It was a day full of amazing speakers, lovely bloggers, yummy snacks, and testing out new products. There are no words for me to fully explain how incredible this day was, and what was even more perfect was the fact that it took me out of my comfort zone. You see, I can be a wallflower sometimes and the night before as I chatted with my sunshine about how nervous I really was and how I almost didn't sign up for that reason (Gasp! Say what?? I know right, imagine missing out on this event for such a silly reason) she told me I would have a blast and that I would meet the loveliest of friends.
She was right! :) Thank you my Sunshine!!

First Communion

The love of my life!
Me & my two boys, makes me the happiest girl in the entire world :)
Family & friends = A most glorious day
Migueltio's big day finally arrived and after a year of preparation he did his First Communion today. It was a beautiful and emotional day watching my big boy all grown up in his suit and up on the alter.
It made me so happy to have shared this special day with my most important loved ones.
