Quinoa Burrito

To say that I love rice is an understatement! But with trying to be the fittest that I've ever been comes sacrifice and willpower, which means a lot to this rice loving girl. I used to eat rice almost everyday, it's no wonder I'm huge!
  A lot's changed these past few months, for one I've stopped eating white rice and switched to brown rice, but that was just the perfect excuse to keep on eating rice, and when I noticed that nothing was happening despite working out and taking out white rice from my diet, I knew I had to make serious changes. 
One of them was to definitely stop eating rice everyday. First I started with eating brown rice once a week and then I decided to do some research and try to find some sort of replacement, that's when I found Quinoa pronounced Keen - wa.
 Let me tell you, I love it! It is delicious, can be used for anything and it tricks my mind into thinking it's rice :)
One of my favorite quick meals with Quinoa is making a burrito out of it, plus it's a winner for my son.

Quinoa Burrito:
Get all of your ingredients ready.
First put your whole wheat wrap on a plate and layer on your first ingredient, refried beans.
Second layer on some spinach.
Third you top it off with the quinoa and roasted chicken cubes.
Voila! You have a healthy yet very delicious wrap :)

You can add as many ingredients as you want and in less than 15mins you have your lunch or dinner and your set to eat.  I say 15mins because I usually cook my Quinoa in a batch and store it in the fridge (must be used within 2 weeks) and when I'm ready to use I just heat and serve! 
Even if you have to cook the Quinoa on the spot it cooks in just 20mins.

  2. Are we surprised that I also featured quinoa on my blog as one of my meals for my What I Ate Wednesday today? lol we have some serious ESP going on. PS- I was just like you with the rice, only in my case it was pasta and bread for my whole life. It's so great when you finally realize you can actually change what your eating to reap the results you want. Looks yummy!!

  4. I've never tried Quinoa before and I will give it a try one of these days! More power to ya' Kary!! Things are good here ;) The kids get out of school this summer and I wanna make the best of it! xoxo
